Gefilte Fish Recipe- Homemade Style
Ingredients:
1 lb whitefish (whole-see instructions)
1/2 lb pike (whole- see instructions)
2 large carrots
1 lg. Onion
2 beaten eggs
3 tsp. salt
1 tsp. pepper
4 tsp. Sugar (to taste)
1/2 cup matzo meal
Instructions:
Finely chop or grate the carrots and onion together and bring them to the fishmonger where you will purchase the fish. Have the fishmonger filet the whitefish and pike, reserveing the head and bones for the stock. Have the fish-man grind the fish along with the carrots and onions (you brought them, didn't you?)
When home, mix all the ingredients together in a bowl. Ship fish into large ovals or small balls (as prefered) Remember, water on your hands will help keep the fish easier to work with. If the mixture feels too thick, add water.
Quickly, let's make a basic fish broth.
Basic Fish Stock
Ingredients:
Bones from fish
1 lg. onion chopped
3 carrots sliced
1/2 cup sugar
2 tbs. salt
1/2 tsp. pepper
Fill a large pot with water and add all the ingredients for fish stock. Bring to a boil. Drop in your fish patties (balls, ovals or any shape you were able to make) Cook for 2 hours while Checking the water level to make sure it stays full. Allow the fish to cool before removing from the pot.
Refrigerate well before serving.
